Braised Cabbage & Apples

Cabbage grows throughout our province, is very affordable and stores well, so it is available most of the year and keeps in the fridge. The crunchiness of cabbage can be softened for all of us, but especially for kids, by marinating in lime juice or vinegar if making a slaw. But another great side is to cook it slowly to soften and sweeten it—perfect for a winter meal!

Ingredients
1/2
large cabbage, red or green
1
apple
2 tbsp
olive oil
1/2 tsp
salt
1 tbsp
water
Instructions

1. Remove the outer leaves and core of the cabbage then chop into slices. Peel and core the apples and chop into small chunks.

2. Heat a large skillet on medium heat then add olive oil. Add cabbage and apples and cook stirring often for 5 minutes. Stir in salt and water. Turn heat to low and cover.

3. Cook, stirring occasionally, until softened, approximately 10 minutes. Serve warm.
