Yummy Hot Chocolate

Traditionally topped with whipped cream and marshmallows and packed with added sugar, this version of hot chocolate is just as satisfying and delicious but made with wholesome ingredients. Frothed milk replaces whipped cream for a healthier version. Affordable plastic milk frothers are available at any kitchen or department store. Instead of using crushed candy canes, get the same flavour with a hint of peppermint extract or use cinnamon for a different flavour profile.

Ingredients
5 cups
whole milk or fortified soy beverage
1/4 cup
maple syrup
1/4 cup
unsweetened cocoa powder
1/2 tsp
vanilla or peppermint extract (optional—can also substitute cinnamon)
Instructions

1. Whisk 3 cups of milk with maple syrup and cocoa in a medium-sized pot while heating on medium low. Stir frequently to ensure milk doesn’t burn on the bottom. Heat until hot and small bubbles are forming. Do not boil. Stir in vanilla and peppermint extracts.

2. Meanwhile heat 1 cup of milk in another small pot on medium low, stirring frequently, until hot and tiny bubbles start to form (or microwave in a safe container—check every 30 seconds). Don’t boil. Froth with frother until stiff.

3. Divide hot chocolate into individual mugs or cups. Test to ensure it’s a safe temperature for children (add more cold milk or ice if necessary). Top with frothed milk and a sprinkle of cinnamon if desired.
