Ingredients
2 cups (500 mL)
Whole wheat flour
1 tbsp. (15 mL)
Baking powder
1 tsp. (5 mL)
Baking soda
1/2 tsp. (2 mL)
Salt
1 1/3 cups (325 mL) or approx. 3
Ripe bananas, mashed
1
Egg, lightly beaten
1 cup (250 mL)
Unsweetened applesauce
1/2 cup (125 mL)
Granulated sugar
1/4 cup (60 mL)
Olive or canola oil
Instructions
- Pre-heat oven to 400°F (200°C).
- In a large bowl, combine flour, baking powder, baking soda and salt.
- In a medium bowl, combine bananas, egg, applesauce, sugar and oil. Stir into flour mixture until just combined.
- Divide batter evenly among prepared muffin cups.
- Bake in preheated oven for 15 to 20 minutes or until tops are firm to the touch and a tester inserted in the centre of a muffin comes out clean. Let cool in tin for 10 minutes, and then remove to a wire rack to cool completely.
