Boerenkool

Boerenkool means kale in Dutch and this is a traditional dish from the Netherlands and parts of Scandinavia and northern Germany. Mashed potatoes are cooked with kale and topped with sausages for a Stamppot, for those so inclined.

Ingredients
1.5 lbs
potatoes, peeled
1 tsp
salt
1 bunch
kale, stemmed and chopped
1/2 cup
milk
1 tbsp
olive oil or butter
Instructions

1. Bring a large pot of water to boil then add the potatoes and salt. Cook for 15 minutes then add the kale and cook another 5 minutes until potatoes are tender. Drain in strainer.
2. While draining, return pot to heat and add milk and oil or butter. Return potatoes and kale to pan and mash until creamy and smooth. Serve immediately.
