Chocolate Avocado Mousse

A delicious treat to celebrate Valentine’s Day or any other chocolate-loving occasion! Made with avocado rather than whipped cream, this version is filled with healthy fats so it’s equally decadent but better for our hearts.

Ingredients
½ cup
dark or semisweet chocolate chips
4 ripe
avocados
¼ cup
unsweetened cocoa powder
¼ cup
maple syrup
Pinch
salt
 1 cup
milk or unsweetened fortified soy beverage
2 tsp
vanilla extract
Garnish
Raspberries or sliced strawberries
Instructions

1. Using a small pot and bowl as a double-boiler on the stove, fill the pot with an inch of water and place bowl over topinto the water. Heat the pot of water to a simmer. Add chocolate chips and stir continually until melted, ensuring they don’t burn. Alternatively, use a microwave-safe bowl and melt chips slowly in the microwave, stirring every 15 seconds to prevent burning. Allow to cool slightly.
2. In the blender or food processor, place all remaining ingredients including melted chocolate, except the berries. Puree for 3-5 minutes until very smooth, light and creamy, scraping down the sides every minute or so.
3. Divide into individual small cups or bowls, garnish with berries and refrigerate for 2 hours to overnight prior to serving.
