Lettuce Wraps
Lettuce is abundant in BC in the summer months and makes a wonderful, light wrapper for all sorts of savoury fillings like protein, grains and veggies. Consider serving all the fillings separately in bowls in the centre of the table so children can decide what they’d like to add to their lettuce wrap.

Ingredients
10 large or 20 small
lettuce leaves
2 cups
cooked noodles (e.g. soba, vermicelli)
2 packages
smoked tofu, diced (or another cooked protein)
1 cup
grated carrot
1 cup
grated daikon (or other favourite veggies)
1 cup
fresh cilantro, basil, parsley &/or mint
1 Tbsp
soy sauce
1 tsp
sesame oil
1 tsp
apple cider vinegar
Instructions
1. Prepare all ingredients and lay out for children to decide what fillings they would like to add to their lettuce wrap.
2. Combine soy sauce, sesame oil and vinegar in a small pitcher or bowl and drizzle lightly over filled wraps for those who would like it.
