Zucchini Ribbons

Ingredients
4 small or 2 small
zucchini
2 Tbsp
lemon juice or vinegar (apple cider or white wine vinegar work best)
½ tsp
salt
2 Tbsp
fresh, chopped herbs (e.g. mint, parsley, dill), optional
Instructions

1. Using the peeler or a spiralizer, process the zucchini into long noodles or ribbons. Top with vinegar or lemon. Allow to sit in refrigerator for at least 15 minutes.

2. Season with salt and fresh herbs if using.

Note:  Childcare facilities with 8 or more children should check with their Licensing Officer about what is needed to serve food.
