Chocolate Fruit Pops

Keep frozen treats wholesome by making them yourself with fruit and dark chocolate, instead of buying those with artificial colours, flavours and tons of refined sugar.

Baking sheet (that fits your freezer)
Parchment paper
Popsicle sticks or wooden skewers (look for ones that don’t have a sharp end)
Microwave-safe bowl or double-boiler
Ingredients
6 cups
fruit (e.g. strawberries, pitted cherries, black or raspberries, banana, pineapple)
6 ounces
dark chocolate
1 Tbsp
coconut or canola oil
8 ounces
Shredded coconut, unsweetened (optional)
Instructions

1. Prepare fruit by cutting, peeling or pitting if necessary. Assemble by placing either one large piece of fruit, like half a banana, on a popsicle stick or by skewering multiple pieces onto a skewer. Lay on a parchment-lined baking sheet. Freeze for 15-20 minutes.
2. Meanwhile, melt chocolate with oil in microwave or over a double-boiler. Lay out coconut in a shallow dish if using.
3. Remove fruit from freezer and roll or drizzle in chocolate then coconut if using. Freeze again for 30 minutes or until set.
