Mexican Corn on the Cob
A fun new take on corn-on-the-cob that is absolutely packed with flavour! Cotija cheese is a Mexican white cheese that crumbles like feta.

              Ingredients
          6
    cobs corn in their husks
  2T
    butter
  1/2 cup
    cotija cheese (or feta)
  1
    bunch of cilantro, chopped
  2
    limes, juiced
  Instructions
              
1. Preheat oven to 350° F  or put barbecue on medium heat. Cook corn in the husk for 40 minutes until tender. Remove from oven and remove husks (corn will be hot so be careful). Cut each cob in half to make 12 servings.
2. Rub each cob with butter then sprinkle with cheese, cilantro and lime juice. Serve warm.
