Yummy Peach Toast
Nothing says summer like peach juice dripping down your chin! And we grow an abundance of peaches in BC in the summer. This dish adds whole grains alongside fruit which helps to round out a snack. For a larger meal or a more luxurious dish, consider pairing with our Homemade Ricotta Cheese

Ingredients

1/2 slices of whole grain baguette
1/4 cup
olive oil
6
ripe peaches, pitted and sliced
2
lemons, juiced
1/4 cup
fresh basil or mint (optional)
Pinch
salt and pepper
Instructions
1. Preheat oven to 350F or put barbecue on medium heat. Grill bread lightly on both sides (2-4 minutes).
2. Mix together remaining ingredients and spoon onto bread slices
