White Bean Fritters
Fritters or pancakes are a fantastic finger food for young children to develop the skills they need to feed themselves. They can be made from veggies or in this case, legumes, one of the plant-based proteins that are recommended to eat more often. Serve with a yogurt dip like our Dilly Dip if desired and a side of veggies.
1. In a large bowl, add all ingredients except the oil and mash well to combine.
2. Heat frying pan or griddle on medium low heat and add 1 Tbsp oil. Take large spoonfuls of batter and form into patties, placing 4 or 5 in pan so they are not touching. Use the spatula to help form the shape into discs.
3. Cook on one side until golden, approximately 3-4 minutes, then flip over and cook the same on the other side. Remove to a plate and keep warm while you make the remaining patties. You may need to add the extra 1-2 Tbsps oil for the additional batches. Serve warm with dipping sauce if desired.
