Overnight Oats
This refreshing breakfast is a nice change from hot porridge as the weather warms up and is a great way to highlight our local and seasonal fruit, like the apples, berries, peaches and plums we grow throughout BC.

Ingredients
3 cups
slow or rolled oats
2
apples, grated ( unpeeled)
1 cup
unsweetened shredded coconut
2 tsps
cinnamon
2 tsps
pure vanilla extract or vanilla bean powder
5 cups
milk, yogurt or kefir (*yogurt may need to be thinned with water)
5 cups
additional fresh fruit, like berries, peaches or plums
Instructions
1. Place oats, grated apple, vanilla, cinnamon and milk/yogurt/kefir in a large bowl or container.
2. Ensure there is enough liquid to cover the oat mixture. Cover and refrigerate overnight or for a few hours.
3. Serve topped with more fresh fruit or consider layering it into a parfait.
