Strawberry Chia Pudding
Strawberries are one of the first fruits of the season, usually in June around most of British Columbia. Celebrate the gorgeous colour and sweetness by eating them fresh, on top of a creamy chia pudding. Chia seeds are full of soluble fibre which helps to form a pudding as they soak in milk. It makes a healthy breakfast, snack or dessert.

Ingredients
3/4 cup
chia seeds
2 cups
milk or fortified soy beverage
1 tsp
cinnamon
½ tsp
vanilla
1 tbsp
maple syrup
5 cups
fresh strawberries, sliced
Instructions
1. Combine chia seeds with milk, cinnamon, vanilla and maple syrup in bowl, cover and allow to sit at least 2 hours in the refrigerator, stirring occasionally.
2. Once set, serve topped with strawberries. Save leftovers in the fridge for up to 3 days.
